Le fromage de Valençay a une croûte fine et régulière et une texture ferme mais pas dure. Il a un arôme et une saveur de chèvre distincts. Le fromage est fabriqué à partir de lait de chèvre entier cru et est affiné pendant 4 à 5 semaines pour le sécher. Pendant le processus d'affinage, le fromage est recouvert d'une couche de cendre de charbon de bois salée, ce qui lui donne une teinte gris-bleu.
