It is made from cow's milk enriched with cream, resulting in a fat content of over 72% on a dry matter basis. In its young form, the Brillat-Savarin develops lactose aromas and a taste of fresh cream. In its aged form, it takes on fruity flavors with notes of mushroom, forest, and hazelnut.
