Sardines in olive oil with chilli and herbs are prepared the old-fashioned way, i.e. they are lightly fried in oil after being carefully gutted and headed. They are then coated with first cold-pressed extra virgin olive oil. Each tin contains between 4 and 6 sardines, depending on the size of the fish. Don't hesitate to keep your tins by turning them over from time to time: old-fashioned sardines are like good wine, they improve with age!
