Soumaintrain is a traditional French farmhouse cheese crafted from raw cow's milk in the Burgundy region. This soft cheese features a washed rind and is treated with a brine and Marc de Bourgogne wash during its production process. As it matures, the amount of Marc de Bourgogne used increases, leading to the formation of a distinctive aromatic rind that is vibrant orange in color. It pairs well with a dry white like Puligny-Montrachet is ideal, offering a balance of power and finesse that complements the cheese.
