The Banon has a very distinctive appearance, as it is wrapped in chestnut leaves and tied with natural raffia before being shipped. Beneath the leaves, the cheese has a thin, beige rind with brown spots. The paste is smooth, shiny, and very creamy, even runny in texture. The flavor of the Banon is strongly goaty, with earthy and woody notes. It is well-balanced, with a pronounced goaty taste that develops as the cheese ages.
