These sardines are caught using a bolinche method, i.e. with a net from which they are taken using a large landing net called a Salabarde to preserve them. They are kept in icy water on board the boat whose name appears on the tin. The tins, carefully filled by hand, are kept for 3 months before being released for sale, to ensure optimum ripening before being eaten.
