Laguiole, also known as Tome de Laguiole, is a renowned French cheese that delights the palate with its sharp, slightly sour flavor and aromatic profile. Its straw-colored pate delivers a creamy yet firm texture, enhanced by a natural rind. Made from unpasteurized cow's milk, this semi-hard cheese is perfect as a table cheese or a key ingredient in traditional French dishes like Aligot. Originating from the village of Laguiole in the Aveyron region, Laguiole cheese has been protected by the AOC seal since 1961. It undergoes an affinage process lasting at least four months, ensuring a high-quality, artisan product that cheese connoisseurs will cherish.
