Recognized with AOP status since 2001, it carries centuries of heritage, first created by monks at the Bellelay Abbey over 800 years ago. Rather than being cut, Tête de Moine is finely shaved into delicate rosettes using a girolle, which enhances its aromatic intensity and melt-in-the-mouth texture.
