Originating from the Haut-Jura region, this cheese is noted for its dense and creamy texture, with flavors that are fruity and nutty, complemented by a slight bitterness. The cows graze on the pastures of the Jura Mountains, which impart a distinct flavor to the milk, reminiscent of mushrooms and tarragon. Bleu de Gex comes in a large flat wheel with a thin brown rind embossed with the word "Gex". The interior paste can vary from butter-yellow to ivory, marbled with pale green-blue veins.
