It is made from raw cow's milk from cows of the Montbéliarde breed, which contributes to its rich, complex flavour. Comté Cuivre is distinguished by its special maturing process, which generally lasts between 12 and 24 months, during which it develops aromas of dried fruit and hazelnut, and a texture that is rich and complex. Its name, Cuivre, refers to the copper-coloured rind that forms during the maturing process, as well as to the cheese-making tradition in the Jura region, where the milk is often heated in copper vats. This cheese is appreciated for its delicate flavour and slightly sweet notes, and is often used in cooking, in fondues or simply enjoyed with bread and fruit.
