Manual harvest with rigorous sorting of the grapes before vinification and complete de-stemming. Fermentation in stainless steel tanks and maturation in oak barrels for over 12 months.
Aging: + 5 / + 10 years.
Pairing: simmered red meat, grilled white meat, peking duck and strong cheeses.

The palate is mineral, juicy, well-balanced and offers a fine acidulous frame, freshness as well as precision, juiciness, a beautiful finesse of the tension as well as straightness (in finesse). Good length. Tannins are fine, elegant and racy. Very discreet hints of good bitterness (cocoa) and a discreet hint of grilled on the persistence.
