Concentrated wine with an expressive nose of ripe red fruits and spices with notes of undergrowth in the back. Similar aromas on the palate, harmonious and pleasantly chewy. Vines are between 20 and 45 years old, partially matured in oak for 20 months (60% concrete vat and 40% oak).
Aging: +5 / +8 years.
Pairing: duck confit, duck breast, lamb, red meat, cheese

a complex, profound wine with a nose of dark fruits, spice, tobacco, and a faint roasted edge. Clean and pure on the palate, revealing a rich rounded style. Long, powerful finish. Silky tannins. Soils: schists typical of the north of this AOC area.

Pairing: game or other strong meat (e.g. pavé of beef in a mustard-grain crust)

Powerful and complex nose of ripe black fruits (blackberry and blackcurrant), spices (liquorice and pepper), garrigue (rosemary), leather, cocoa, menthol. Mouth is also powerful and full-bodied with round tannins. A very smooth wine with a beautiful length. Probably one of theh most accomplished blend of Syrah/Grenache/Cabernet-Sauvignon/Carignan/Marselan/Mourvèdre from the south of France.
Aging: +1/+6 years.
Pairing: Rabbit with prunes, Ham, Ribs, Vils, or for dessert with a blueberry pie.
